Icy Peacharama

A fresh treat for all ages!

INGREDIENTS
3 or 4 medium ripe peaches, halved and pitted
Juice of 1 lemon
1/4 cup freshly squeezed orange juice
1/4 cup sugar, or to taste
1/4 teaspoon vanilla extract

 

DIRECTIONS
1. Coarsely chop peaches in a food processor. Transfer 1 cup of the chunky peaches to a medium bowl.
2. Add lemon juice, orange juice and sugar to taste (depending on the sweetness of the peaches) to the food processor. Puree until smooth.
3. Add this mixture to the bowl with the chunky peaches and stir in vanilla.
4. Divide the mixture among twelve icy pole molds (or small paper cups). Freeze until beginning to set, about 1 hour.
5. Insert icy pole sticks and freeze until completely firm, about 1 hour more.
6. Store in the freezer for up to 3 weeks.

 

Makes 12 serves at 33 calories each.

Splash's Coconut Fruit Salsa

INGREDIENTS
1/2 sweet apple, diced
4 strawberries, diced
6 grapes, halved
5g Shredded Coconut

 

DIRECTIONS
1. Placed chopped fruit in a bowl.
2. Mix in coconut.


Serves 1
110 calories

 




Chocoholic Option - 125 cals
Mix in 1/2 teaspoon Cadbury drinking chocolate

Splash's Tuna & Avocado Couscous

A very quick, easy and tasty snack for two people, that can also be served as a meal for one.

Snack size serves 2 - 148 calories per serve
Meal size serves 1 - 295 calories



Ingredients:
75g fat free Tuna tin (80 cals)
1/4 Avocado diced (185 cals)
3/4cup cooked Couscous (130 cals)



Directions:
1. Cook cous cous as per the directions on the packet
2. mix tuna with 3/4 cup of cooked couscous and place in two small bowls
3. Top each bowl with half of the diced avocado




Splash's Bananarama Pancakes


This recipe is sooooooooooooo easy!  Make it for a snack, breakfast, brunch, lunch or dessert.

As a Snack or Dessert serves 2 - 135 cals each
As a meal serves 1 - 270 cals


Ingredients:
1 Medium Banana
1 Egg
100g Extra Light Ricotta
75g Frozen Blueberries


Directions:

1. Mash a ripe banana in a bowl so it's really mushy.
2. Crack one egg into the banana mixture and mix really well until all combined.
3. Place tablespoons of the mixture into a frying pan sprayed with light cooking oil. The mini pancakes should be about 5-6cm in diameter.
4. Flip pancakes over when the bottom is cooked.
5. Place pancakes on a dish while you cook the remaining mixture.
6. Heat the frozen blueberries in the microwave until warm.
7. Mix the warm blueberry juice with the ricotta.
8. Place all pancakes on a plate and top with ricotta mixture and blueberries.
9. Share this dish with a friend for a snack




Splash's Chicken & Sweet Potato Muffins

Ingredients:
250 g raw, diced Chicken breast fillet
250 g sweet Potatoes
3 small Carrots
1.5 teaspoons Curry powder (or less if you dont like spicy)
1 Egg
Fresh black Pepper

Directions: 1. Peel the sweet potatoes and cut them into cubes
2. Peel and slice the carrots
3. Place sweet potato and carrots in a microwave safe bowl and mix in the curry powder
4. Cook in microwave until semi soft or for up to 6 mins (depending on your microwave)
5. Put the raw chicken breast in the food processor to mince it
6. Add the sweet potatoes and carrots to the chicken, and mix together in the food processor
7. Add the egg and fresh black pepper, and mix together in the food processor
8. Pre heat a oven at 180°C
9. Put the mixture in a lightly greased 6-muffin tin
10. Bake for up to 20 minutes at 180°C or until cooked
11. Makes 6 muffins

Can be frozen and reheated in a microwave.

Protein: 12 g

Week 4 Weigh In - R1 2013


Week 4 = - 0.6kg
Week 3 =  -0.1kg 
Week 2 =  -1.5kg
Week 1 =  -1.4kg 

Total weight loss = 3.6kg

I'm feeling tired and not managing Chronic Fatigue well this week. On the bright side, I'm only 4kg away from my beautiful Review dresses fitting me again SQUEE!

This weekend is full of 12WBT catch ups. 
  • On Saturday I am going to FitX with a couple of my R1 2012 Lean & Strong training buddies.  
  • On Sunday I am having lunch with six SplashFits. 
  • Oh and next weekend I am spending the whole weekend with seven of my 12WBT Lean & Strong training buddies, including one from Sydney. Two of them are staying with me so it should be a really fun weekend!!! 
What a great fortnight I have ahead of me :)
